Ingredients
- 1 1/2 cups finely ground granulated sugar
- 1/2 cup water
- 2 tablespoons ground flax seed or 5 tablespoons applesauce
- 5 tablespoons water (for the flax, separate from the sugar water)
- 1/2 cup oil
- 1 tablespoon vanilla extract
- 3/4 cup cocoa powder
- 1 1/2 cups all-purpose flour (gluten-free option available)
- 1/2 teaspoon salt
- 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350°F.
- If using ground flax, mix it with 5 tablespoons of water in a small bowl; set aside to thicken. Skip this step if using applesauce.
- In a medium pot over low heat, combine the sugar and 1/2 cup water until dissolved (5-10 minutes).
- In a large mixing bowl, combine dry ingredients except for chocolate chips.
- Pour the dissolved sugar mixture into the dry ingredients and add the remaining wet ingredients (flax or applesauce). Mix until just combined.
- Gently fold in chocolate chips.
- Transfer batter into an lined 8×8 baking pan; optionally sprinkle extra chocolate chips on top.
- Bake for 35-42 minutes or until a toothpick comes out with moist crumbs.
- Allow to cool completely before slicing into squares.
