  • 2 tablespoons ground flax seed or 5 tablespoons applesauce
  • 5 tablespoons water (for the flax, separate from the sugar water)
  • 1/2 cup oil
  • 1 tablespoon vanilla extract
  • 3/4 cup cocoa powder
  • 1 1/2 cups all-purpose flour (gluten-free option available)
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F.
  2. If using ground flax, mix it with 5 tablespoons of water in a small bowl; set aside to thicken. Skip this step if using applesauce.
  3. In a medium pot over low heat, combine the sugar and 1/2 cup water until dissolved (5-10 minutes).
  4. In a large mixing bowl, combine dry ingredients except for chocolate chips.
  5. Pour the dissolved sugar mixture into the dry ingredients and add the remaining wet ingredients (flax or applesauce). Mix until just combined.
  6. Gently fold in chocolate chips.
  7. Transfer batter into an lined 8×8 baking pan; optionally sprinkle extra chocolate chips on top.
  8. Bake for 35-42 minutes or until a toothpick comes out with moist crumbs.
