  • 2 tablespoons light soy sauce
  • 2 tablespoons dark soy sauce
  • 1 tablespoon Shaoxing apple vinegar
  • 1 tablespoon granulated sugar
  • 1/2 cup low sodium chicken broth
  • 1/2 tablespoon cornstarch
  • 1 teaspoon toasted sesame oil

Instructions

  1. Marinate the beef: In a bowl, mix sliced beef with baking soda, vinegar, soy sauce, oyster sauce, white pepper, water, and cornstarch. Let marinate for 15 minutes.
  2. Prepare the stir-fry sauce: Whisk together oyster sauce, soy sauces, vinegar, sugar, chicken broth, and cornstarch in a small bowl.
  3. Blanch the broccoli: Boil in salted water for 1-2 minutes and drain.
  4. Cook the beef: Heat oil in a wok over medium-high heat. Sear marinated beef until browned; remove from wok.
  5. Stir-fry: Add more oil to the wok; sauté garlic and ginger until fragrant. Add broccoli and stir-fry for a minute before returning the beef with stir-fry sauce. Toss until coated.
