- 1 1/2 cups plant-based milk
- 1 small banana
- 1/2 tbsp lemon juice
- 1/2 tsp vanilla extract
- Oil (for frying)
- 3 apples (peeled, cored, and chopped)
- 3 tbsp coconut sugar
- 2 tbsp plant-based milk
- 1/2 tbsp lemon juice
- 1/2 tsp cornstarch
- 1 tsp cinnamon
Instructions
- In a mixing bowl, combine oat flour, rice flour, cornstarch, coconut sugar, flax seeds, and baking powder.
- Blend plant-based milk and banana until smooth; mix into dry ingredients.
- Heat oil in a non-stick skillet over medium heat; pour 1/4 cup batter to form thin crepes.
- Cook until golden brown on both sides.
- In another skillet, simmer chopped apples with coconut sugar, plant-based milk, lemon juice, cornstarch, and cinnamon until tender.
- Fill each crepe with apple mixture, roll up gently, and serve warm.
