Instructions
- Preheat the oven to 325°F and prepare an 8×4-inch loaf pan by greasing it or lining it with parchment paper.
- In a medium bowl, mix the almond flour, baking soda, and salt. Set aside.
- In a large bowl, whisk together the melted coconut oil, egg yolks, and apple cider vinegar. Add the dry mixture and stir until just combined.
- Wait a minute before gently folding in the whipped egg whites to incorporate air for fluffiness.
- Pour the batter into the prepared loaf pan and bake for 40-45 minutes until golden brown; check doneness with a toothpick.
- Cool on a wire rack for at least 15 minutes before slicing.
